
A Bachelor of Hospitality and Tourism Management graduate from University de Toulouse le Mirail, France, Bala Murali Nanda is currently the Course Leader for Diploma in Culinary Arts at Taylor’s College School of Hospitality and Tourism (TCHT).
His key responsibilities include conducting TCHT’s Diploma in Culinary Arts program using modern teaching methodology and practical classes; helping young chefs to master basic as well as more advance culinary techniques; assisting students to acquire additional technical or skill-based knowledge; providing a base foundation for students to overcome workplace challenges; furnishing additional training and support to professional chefs who lack knowledge and language skills to achieve higher technical competency and initiating new techniques demanded by the service industry.
In his professional capacity, Bala has also rendered kitchen consultancy services for the Royal King of Swaziland in South Africa (2007), conducted Certification in Western Cuisine and Kitchen Management courses for TCHT’s Centre for Continuing Professional Education (CPE) for Industry Professionals (July 2008) and been a member of the judging panel for professional culinary competitions such as the 4th Nestle Golden Chef Hat Award (2008) and Pertandingan Kemahiran Malaysia ke-13 (2003).
Bala has won numerous awards at key industry competitions such as Food Hotel Malaysia (FHM), Battle of Chefs Penang and Meat & Livestock Australia (MLA) Black Box Challenge. In addition, he was the Team Manager and Trainer for the Nestle Young Chef Competition in which his team emerged the winner in 2006 and as first runner-up in 2007 and 2008.
